    Valentine's Day cooking: Delectable raspberry and white chocolate shortbread cookies

    Valentine's Day is all about that special gesture. And what's more special than adding a personal touch? Which is why cooking for your loved one, or yourself, is an age-old, foolproof Valentine's Day plan.

    However, if you're not a fan of spending hours in the kitchen, and whipping up an entire meal is not really your ideal idea of spending Valentine's Day, it is still possible to earn some brownie points, thanks to this easy recipe.

    These cute, delicious raspberry and white chocolate heart-shaped shortbread cookies are just perfect for the occasion, and are sure to be a hit with your date.

    Or better still, spend quality time with your special someone baking together.

    Shortbread Cookies

    Ingredients
    Butter, softened: 1 cup
    Confectioner’s sugar (icing sugar): ½ cup
    Vanilla extract: 1 tsp
    Salt: ¼ tsp
    All-purpose flour: 2 cups
    White chocolate (optional but recommended): 1/3 cup
    Raspberry/Strawberry jam: 1/3 cup

    Method
    - Preheat oven to 180 degrees celsius
    - Line baking tray with parchment paper
    - Using a hand mixer, cream the butter and icing sugar together for a couple of minutes. Add vanilla and salt and continue to mix
    - Add flour gradually to the mixture to form a dough
    - Roll out the dough until it is about 1/8 inch thick
    - Cut out different shapes with a cookie cutter
    - On half the cookies, cut out a smaller heart shape in the center
    - Place cookies on baking tray and refrigerate while the oven is preheating
    - Bake the cookies for 8 minutes or until edges turn slightly brown
    - On the cut out cookies, sprinkle a layer of icing sugar on top
    - Melt white chocolate and spread a layer on the cookies after they have cooled down. Let the chocolate set slightly for 5-10 minutes.
    - Spread a layer of raspberry or strawberry jam on top of the chocolate. Place the cut out cookies on top.
